THANKSGIVING 2009 CONTINUED

So how stressed is everyone yet?  Calm down..Chances are you're cooking for family and/or good friends...enjoy your
holiday...again, nothing is ever perfect...it's your time and thought that matter, not if your napkins and plates are in sync.
Deep breath again, and you have two days to get it all done...I'm going to start tonight off with a simple recipe, and you
will look like master chef...Cranberry Sauce, which, if you are roasting a Turkey, is a must have.  The cans are fine,
really, don't run them back to the store.  However, pick up a bag of fresh ones.  Rinse them off.  Let them drain.  In a
saucepan, bring 3/4 cup of water, 1/4 cup of fresh squeeze orange juice, a sprig of fresh Rosemary or three sprigs of
fresh thyme, and a cup of sugar to a boil.  Add the cranberries.  Bring to a rolling boil, then let them cook on medium
heat for a good 10-15 minutes.  Add 1 tsp. of grated orange zest to the pot.  Pour it into a container and let it come to
room temperature.  Then refrigerate until Thursday.  Oops, almost forgot, remove the herbs before you pack it away.
The flavor is so sweet, tart, citrusy, herby, and refreshing...If you like the sauce without the berries in it, run it through
a sieve when you pour it into a container.
